White garlic caramelizes slowly for 40 days, under controlled temperature and humidity, developing its very tasty characteristics as well as its antioxidant properties.
After the garlic has ripened, we clean the cloves by hand, choosing only the best and the best, which are placed in sterile glass jars.
The result is extremely aromatic, with tones of licorice, caramel, coffee and castor oil. It is soft, can be melted easily in hot and cold sauces, as a marinade spread, in salads, pasta, as an ingredient in superfood bars.
As time goes on, it matures even more with a mastic-like texture. At this stage, it's consumed as a caramel, as a superfood snack, or even as the Koreans suggest: dipping it in chocolate!
